Campfire Recipes – Velveeta Chicken

Is there anything better than a meat served with cheese? I don’t think there is either. Check out our Velveeta chicken and cheese recipe!The ingredient list is short and sweet.

  • 1 lb. boneless skinless chicken breasts, cut into 1/2-inch-thick slices
  • 2 tsp. Italian seasoning
  • 1 pkg. (16 oz.) frozen broccoli, cauliflower and carrot blend, thawed, drained
  • 1/4 lb. (4 oz.) VELVEETA, cut into 1/2-inch cubes

 

  1. Spray 4 large sheets of heavy-duty foil with cooking spray; top with chicken, Italian seasoning and vegetables. Fold to make 4 packets.
  2. Grill 15 min. or until chicken is done. Cut slits in foil to release steam before carefully opening packets.
  3. Top ingredients (still in packets) with VELVEETA. (No need to refold packets to seal.) Grill 5 min. or until VELVEETA is melted.

For camping sometimes we have used pre-made chicken from a can for easy transport. This drops the cooking time and makes for easier prep.
