The CV carb when properly tuned and jetted is just as good (if not better) than the "E". The CV automatically adj for altitude changes better than other carbs. Some companies profesionally set-up the CV (polishing and minor internal changes) so that it actually out performs the E and Mikini slide carb. But many people just like the S+S air cleaner and go for the look. I've ran both the S+S and CV on my ride and prefer the CV after I correctly jetted it and shimmed it to run for my upgrades.
Good luck, its an easy swap either way.

For what it's worth, if I were you I'd forget about that "E" and go with a Mikuni HSR-42 pumper. In fact they have a model that is especially set up for Sportsters, which comes with accelerator pumps nozzles that are slightly smaller than those used on the Big Twin engines (TM42/11-60 vs TM42/11-70).

I've used just about every type of carb on my Harley's over the years and there is nothing better (or easier to work on/tune) than the Mikuni HSR series.

I am with them get keep the cv and just polish, dyno jet kit (spring, emusion tube, jets drill) and file the slide. This is just my opinion but i cant get a super e to feel right for me. Ive changed mine out for cvs on two sporties now. the cv carb is about as close to fuel injection as you can get out of a standard carb.

i like the S&S too man, runs awesome on a stock or modified sportster and really easy to set n forget the fuel enrichment too. some guys have converted their EFI bikes to carb using a S&S super E kit n a ultima programmable ignition kit with awesome results.
the 883 i'm working on right now has a SE 40mm CV (only cuz its brand new n i got the SE kit for f--kall) but after i get a feel for the ride i'll probably get a S&S super E kit or a ultima HSR42 kit.
the S&S kit makes the bike look way cooler when it just sitting there don't it ;-) folks would always walkup n go man that looks cool
