When to change the Brake rotors

The answer about rotors is that they should be replaced when they get below a certain thickness. That thickness is usually engraved on the rotor, so you should be able to see it on your bike's. In almost 40 years of riding disc brake bikes the only one's I have replaced because they needed replacement was due to a serious crack or being warped, not getting too thin. So you probably have a long long way to go yet!

If your pads still make proper contact with the rotor then you're fine. I'd replace 'em soon, though, personally.

Whoa. No I didn't say that! The only rotors I have replaced, because I needed to, didn't get to minimum thickness, they cracked before they got there.

Um, okay, but dirt bikes got me to believing in sintered pads, but we had mud as an escort. So, what pad have you settled on as your best? I still do stuff that requires heating up the discs and even a couple times the fluid to vanishing point. Oddly, no cracks, just grooves.
