Default MIKUNI HSR45 getting it dialed in

Rev perf 98 big bore kit 10.5/1 pistons
Stage 2 ported heads
S&S 510G cams
Bassani road rage exhaust
Mikuni hsr45 carb and intake

I have the rickest needle jet in right now. Obviously runs rich lol. Which one should I be using just as a ball park? Perhaps the original one it came with? I'm sure someone out there has a similar set up tuned and I'm curious what jets they're using to give me a ball park starting point.

Also when I roll on the throttle slow the bike pulls hard and is fast. When I just slam the throttle open it just doesn't seem to take off until it gets a second to start revving then off I go. Hesitation I guess. Is that related to my needle jet being way rich?

22.5 pilot, -98 needle center notch, 50 pump jet 175 main AR screw 1.5 turns, set the PJ with a dimes width for ON and off setting flush with the top of the carb.
