Looked at at a few charts, they hit hard right off the bottom ~2000 rpms and hold up well until about 4400 - 4500 rpms then fall off pretty fast.

Let me see if i can help you make sense of this cam stuff.
1- Most every cam will offer you a improvement in a span of 4000RPM's or less range
2- Generally a cam that is really strong in one section of the RPM range will be really soft in the other area's
3- milder the cam is in specs , The less it's effects are in both where it really shine and where it soft.
So your thing is to decide where you want your cam to work best at. Because there is no cam out there that going run like a raped ape from idle to red line. Now if you ride as i think i understood you ride then i highly doubt you our below 2500 rpm's very often.
So i hope that will help you decide both where you want the cam to work and also how to decide just how much cam you want.

I have had the 37s and now I went with the 26s. I have the SE 10.25:1s and although it ran like a raped ape up on the top end, couldn't stand the loss of low end.
I tried running the 37s with the 4° key to try and get a little more torque from it, but was still not satisfied with it. The 26s are much better all around for me.
I put the 26s in my brother's 06 with a 9.5:1 95" kit and it runs really nice...good all around power.
Unless you are going all the way with the build, stick to the lower compression like you are thinking and I recommend the 26s over the 37s.

I dont have a Tach but Ive ridden bikes in general for 30yrs now. I am pretty sure Im not below 2500 much at all unless cruising at 70mph in 6th (whatever rpm that is)
I would like strong low with great mid and I am pretty sure I'll get that with the 26. I guess Im afraid of leaving alot on the table with low lift and my current ridding style. I guess my answer is if it comes on around 2500+ I'll be good with current way I ride in lower gear so Im in the sweet spot. I guess if I go too low and crack it from 2500 and run out at 4500 thats not much powerband course I could short shift it then I'm never up to 6000. Decisions Decisions.

Now you are heading toward big boy cams. You will really need to do the big bore and up the compression to around 10.2:1 - did not think you wanted to do that and plus these cams move the performance solidly out to the right(mid to higher rpms) compared to the other cams discussed - did not think you wanted that either.
Cam manufacturers tend to overstate the range that there cams excel in. As said before no cam,(especially with near stock compression) can work great for more than about 2500-3000 rpms.
