Here's a better picture of mine. This is the HD 16" fat ape setup from the catalog. They are actually 4" risers and 14" bars. I don't know why they call it a 16" setup. These measure 17" from the top of the tree to the centerline of the hand grip.
The thing is, bar height is tricky because many bars have angled grip areas that drop down or back substantially and change the riding position. I've seen some of the true 14" and 16" bars that put the hand grip area back to where a 12" bar would be. In effect, they look tall, but the grip area is not all that high.

personally I hate the stock risers. I dont like the way they pull back. I like the look of a short riser and a taller bar. Also with a short riser you don't notice the wiring going from the bars to the neck.(if you are running the wiring through the bars).I'm 5'10" and the 16" bars on a 1.7 riser put my hands just about even with my shoulders. Its all a matter of preference. And I also went with the ss cables for the same reason.

I am 6'4" running a 14" Narrow Ape on a 2" riser. Some things to look at other than quality and height is grip angle. If you have wrist issues too much grip angle can really wear you out at the end of the day. Aesthetically, I think its important to have bars which place the bend inside the triple tree. If the vertical portion of the bar or rise section of the bar is outside the line of your forks is does not look good IMO. The Carlini Pist Apes, Santee, Todds and Burly's all do a good job of this. Alot of the other bars are made for wide glides or soft tails which have a wide triple tree.
