Use a 45 or 48 idle jet, stick a spacer under the slide needle (not just any lump of iron but a proper one, most Indies have them left over from Dyno Jet kits) and go to a 190 main for starters. See how it perfoms and look at the plugs, they should run grey with a darker ring around the edge of the plug at the end of the threads.
I run 48 and 195 but Kiwi gas is different to yours.

Just re-read an article in American Iron (May 2011) on this very subject. The author, Joe Minton, suggest staying as close to the standard slow jet if you can, a #45. If you must go up go to a #46. Not available at HD. The main jet is fine. The idle mix screw is turned out from lightly seated to 2 turns as a start. The needle is changed out to a HD part number 27094-88 ('88 Sportster). He used to recommend using two #4 washers to raise the needle but has since shyed aware from the shims in favor of the Sportster needle. This is a good article if you can find the magazine somewhere.
