Default Low to Mid Range cutover settting on a 2006 Dyna FXDLI

Need some assistance with a SERF I have on my bike. Maybe not the serf but more in the way of helping me understand the low to mid range cutover setting on the bikes and what effect it has. The only SERF threads I have found that were helpful have been from sportsters. They are setting the low to mid cutover on their bikes between the 1800 - 2000 rpm range from what I have read. First off I am not sure what effect this setting has on the bike and secondly would the rpm setting be different for the larger 88 engine? Any help would be appreciated.

Running the stage I SE air cleaner with K&N air filter and SEII exhaust with the Big City Thunder Monster Baffles which is pretty close to no baffles.
