Its the sensor in your fuel tank. My old Sportster used to do that and that was its problem. The Superglide has never done it and the light goes off immediately after the fill up.
You can cycle through your dash with the trip button and when it gets to your mpg range, hold down 'trip' and it should reset it. Mine has done that a few times, and that trick seems to work.

Mine usually shots off immediately after getting fuel as well. Probably your sensor.
Mine did that once, suddenly the light came on and the fuel gauge stopped working. I giggled the wiring and it came back to life. I called the dealer to schedule an appointment to get it fixed and the service advisor recommended that I check the connections (knowing I do a lot of work on my bike). I disconnected and reconnected them and it works fine now, simple case of loose connections (rare with current connectors but it does happen).

I've gotten so dependent on the gas gauge, I'd hate if mine stopped working. Having to stop when you "think" you need gas sucks, like on my old bikes. Funny thing, I only ran out once back then.
