IMHO Depends a lot on which frame and riding style.
Ive ridden a softail TC88(stock), Dyna TC96(stock), dyna TC96(current setup), and a friends dyna 107 fully worked heads, cams, throttle body, tune etc.
The stock 96 was happier at every rpm and riding situation. I felt it could be left alone as is and still been a fun bike. The fully worked 107 in a dyna was a handful and probably more than most riders need/want.
The TC88 was just too anemic for me, it was boring from the first time i let the clutch out.
Never rode an evo but i do love the sound of a carbd bike with the idle just loping along...
Having said all that, i would guess for most riders a lower limit of 80/80 and upper of 100/100 for most riders to be happy but thats a wide range i know...
I will be working mine to a 107 as funds allow

Yes, very. Fast bikes are fun. I'm not a cruiser like you Kees, and I don't mean that in a derogatory manner... I just like to ride the absolute **** out of my motorcycles, and the faster the better. Do I cruise a lot? Yeah... if I'm on a long distance run of course I don't ride ***** to the wall, but for a good little 200 mile ride on a Saturday, yeah I like to beat on it a little. Wheelies, banging gears, all that stuff.
