Default EV27, I'm a believer now.

I don't really know what it did, but, I put the .095 jet back in the S&S, re tuned the carb and went for a highway ride. She's really pulling nice now.

I'm wondering why I get to about 80 and have a lot of throttle left, but she doesn't go any faster. Not that I really want to, but, something still needs to be tweaked. Timing?

Off the line, she really flies now though. And I passed with no fear!

If all else is stock, I'd look at Timing and Carburation, A stage 2 evo should hit the century mark with no trouble. Mine has had more done than yours but I hit 100 and have a handful of throttle left, just a little short on nerve....

I just remembered....You need a new exhaust, seriously that is supposed to be done at stage one, that's your problem....

Also make sure your throttle is opening the butterfly all the way.

Mine gets buzzy at 80 with my evl3010 but it has a lot more left.

It's kind of weird... Sound changes, and the bike becomes a different animal... Has a lot of grunt.
