Default Torque plate ?

Do I need to use head and base gaskets with the plates ?

You're trying to simulate what it will be like when it's on the motor. Use the gaskets. Use Cometics & you can re-use them.

I am an amature but shouldn't the cylinders stud holes be used for proper torque down.

Looks like he has bolt patterns in/around the thru-hole area, for that, as long as the plates are rigid enough.
