Default Evo 1340

Ok I would like to get more power out of my EVO 1340 I was told that I can install a EV27 cam and 10:01 pistons with out doing any other work to the motor
would like some input on that please.

You recieved good information.
Naturally fuel, and timing adjustments will be needed to extract what that'll show.
A good valve job, with a 1.900" intake valve, and some port blending will only add to the good delivery, and overall output, of that well known combination, but is not a "need" to have that show you a very good increase.
A Wood 6 is also a very, very, good choice.

Scot Finally got to do the work on my bike yes I know it's been a long time I need to install a new carb what would you suggest.

My son did a similar build on his 87 FXR [same carb, pistons] along with the S&S heads. He runs an S&S carb. That bike is quick; almost scares me to ride it.

I have a EV27 and 10.5:1. Love the power and torque, but I have to add octane booster to premium to keep it from pinging. Makes premium gasoline about .68 higher, but it runs like a scalded dog.

Re-jetted Stock CV. Intake is polished as are the heads.

The OEM CV carb, jetted, will work great, as will a 42 Mikuni, or an S&S E.
All work very well set up correctly.
If your already have the CV, basically look no further.
