Default Head gasket size. Andrews 57h

I am finishing up my build having added the SE 103 kit and Andrews 57h cams. Should I go with a .030 head gasket or the stock .040?

the .030 will give you a little more compression

.030 squish is optimal, but you need to check your deck height. You can use a .027 if the piston is down in the hole too far, but you can also cut the bottom of the barrels. It is an extra step but it's the details that make the difference.
