Fresh meat! Welcome to the forum.
An Evo.
Pull the heads, have them shaved .050". Install an EV27 cam, be sure to replace cam bearing with a Torrington. Use Cometic head gaskets and James base gaskets when you put it back together. Adjustable pushrods. Pull the plug from the backside of the carb, seat it lightly, and open 2 1/2 turns. Re-jet the main at 180. Pull the slide out and re-drill the bottom hole with a #29 drill. Set the needle clip at the third groove.
Hang on.

What is your budget?
Best option drop in a crate motor.
Second best build an 89" stroker motor.
Third best do a stage one and two upgrade on that motor and leave it there.

I have a 91 softail ev27 cam ,se air cleaner drag pipes,stock carb rejected with plug out and air mixture set my buddies on their 103 and 110s try to run 100 mph thinking they will leave me the look on their face when the old grey beard and evo is right beside them is priceless,you don't need a lot to run with the bigger motors

I rode with a guy who had a 91 FXR out in Sturgis in 2013. He was ahead of the pack (my 88 ci, a few 96's and a couple 103's) the entire time. It was a stock 80ci motor with a 2:1 exhaust and a KuryAkyn air cleaner not sure of any internal engine work. I've had a few Evo's but don't recall them being as quick and fast as this one.
