Easy to get accommodations when the schools are in session. Once the kids get out, the family vacations start, and things get pretty booked up.
Weather can be awesome in September except in the highest elevations. If you are renting a bike for this trip, the distances are longer than you might think, so consider a touring bike.
USA Labor day is pretty much the official end of the busiest tourist season. This year it is Sept 5th. After that date availability gets better and prices begin to drop.
There is a tour in that area called the Grand Circle. Several routes to see the best stuff. Depending on how much time you have available you might include that in your tour.

Im from the UK and rode through Utah on my roadtrip from Cali to Florida. Utah is probably my favourite state for riding, every corner is another jaw dropper. I did the normal Zion, Bryce, Momument valley route then Colorado and Million Dollar Hwy and beyond.
Try and do the Moki Dugout and take a pic at the Mexican Hat, Lake Powell is beautiful but check the ferry is running, it wasnt when we arrived and had a 40 mile detour through Glen Canyon, great ride but 150 from there to Mexican Hat without passing a gas station!
Envy you, would love to do it again sometime.
