I own three bikes besides my FXST, and I still ride them all. The list is: 2004 BMW R1150RT sport tourer - 2006 Honda CRF450X dirt bike - and a 1992 Suzuki DR350S dual sport. All pictured below.

I ride a Honda ST1300 sport tourer. It is a V4 shaft drive and has 115HP and weighs 700 lbs. It holds 7.7 gallons of gas and I can go 300 miles between gas stops! It's no where near as fast as the racer replica literbikes, but it is pretty darn fast for a bike that weighs that much.
I kept mine. 2007 CBR600RR. I stripped it down a bit, changed the pipe, rearset, levers, and brakes and use it for track days or if I feel like running through the canyons here. I went through the same thought process you did but my wife said "why don't you keep it for the track". Can't argue with that. Keep yours!
Oh yeah. Different bikes for different roads and rides. Perhaps I get bored too easily with one bike all the time. Having diversity makes one appreciate each one more.
I've been watching craigslist for a big bore sport tourer over the past couple of months. I think I may have found one but won't know for a couple of days. I love all types of motorcycles and can't limit myself to one particular brand or style.
I had a 2006 GSXR1000 and a GSXR1000 track bike that I built from scratch to go along with my RKC. The track bike I built from scratch (thanks ebay!)
Then I went and bought my buddies CBR1000RR.
Figured it was time to end the insanity and sold all my sportbikes and bought my Ultra Classic. For the riding I do the Harleys are much more fun and less worrisome. One day I might end up with a Ducati 1098 that I put on the track.
