Why don't newer big twins have the potato sound?

I don't have a lot of experience with BT's (I ride a Nightster) but I am looking at Fatboys lately. I was surprised by the exhaust note of the stock (2007) model - the valve noise was almost louder than the pipes. I later checked out a 2008 with V&H longshots, which was loud, but lacked what I would consider the classic Harley potato sound. What mods do folks do to get a great sound?

Not entirely... I had an 04 dresser and currently have an 05... both of which had fuel injection.

And my '05 Heritage is carbed...but no potatoe.
Once in a rare while it will say, "cough, gasp, miss, rope-a-dope rope-a-dope rope-a-dope" then goes back to the usual "chumminachumminablug chumminachumminachumblugblugchumminablug"...and so forth. You gotta love the occasional "BLOOOP" they do when starting too.

I've always thought it was more of a 2 cylinder John Deere sound myself as opposed to a potato

fuel inj smooths out the lope....cam lobe separation defines it as well....bc of the epa, neither are now conducive to the old harley sound...like say a carbed shovel....to fix it, chunk the injection, change cams, & give it some compression
