There are plenty of V-Twin crotch rockets out there. Does that mean I can buy a new Dyna/Softail/RoadKing/etc. and change out the exhaust to make it sound like a rice burner if I wanted?

I don't get what you're saying, there's v twin crotch rockets, yes. They have a vtwin. If you put an I4 in your harley, yes, it'd sound like a i4 powered street bike...
