Tuners - Obviously in over my head

The subject of tuners is kicking my ***. It seems everybody and their Brother along with their inbred uncle makes these things and they're all the "best". I take it some plug into something and stay on the bike, some need a laptop to play with, some don't and some have their own screen for whatever reason. Some can be adjusted multiple times and some are a one shot deal. Some require a Dyno, some don't. Some are $200.00 and some are $700.00. I have no idea what I'm supposed to do. Here's the bottom line. 2007 Street Glide undergoing big bore to 103" Andrews 57H cam (I think - don't have it yet) stock heads (may clean them up another time) Cobra true dual head pipes, Rinehart mufflers and K&N high flow air cleaner (may go to Heavy Breather at some point) At the risk of ending up more confused, I ask for your help.
You could go with something like the Power Vision, it is delivered to you with a Custom Map, for Your Bike, already installed in it. You can plug it in, load the new tune into your bike, unplug it, and be riding with the New Tune in 5 minutes. The Power Vision will give you all the available power.
For more of a budget solution you could go with something like the Xied's, this will leave 10% to 15% of the power on the table, but we have had thousands of people happy with this solution.
