I have read that the Bendix carburetor that came stock on my 1975 XLCH does not work well with todays gasoline with Ethanol and no lead. Do you know this to be true? Is a new S&S carb a better carb for my rebuild?

I have not heard this anywhere, after more than a decade of working these IronHead forums. It sounds like one of those Urban Myths - someone who someone else trusts said it and the story carries on.
If the carb is not working well then there is a technical problem with the carb or with some other tune up parameter.
There is a few popular options - Mikuni VM38-9 [what i have] , 1990-on Sportster CV [what last12know has], various S&S carbs, and others.
What problem[s] are you having? Perhaps we can help with it.
