I have the service manual, but I must be blind. I am planning on changing the oil, transmission and primary - how many quarts does each take?

After reading a bit closer I found the following:
Oil Bag - 3 qt
Transmission - 32oz
Primary - 32oz
Guess I'm a bit shocked it's such a small amount for the tranny and primary.

I suggest you fill the oil tank so the level is about an inch below the filler neck. This method will prevent overfilling the tank, which is one of the causes of oil blowing out the breather.

Is the oil level supposed to be checked with the bike on the kickstand or straight up?

I check the oil level on my `89 with the bike straight up.
If you check the oil level on a cold engine, the level may appear low.
Before adding oil, run the engine to get the oil hot, and to scavenge oil that may be down in the crankcase.
It is best to only add oil after checking it when the engine is hot.

+1 my dyna holds 3 quarts "dry" if the engine is diassembled. On a "wet" oil change it takes 2.5 to make it full because 1/2 quart stays in the engine. I would recommend you put 2.5 quarts in and run it 30 minutes then shut it down allowing 4-5 minutes for the hot oil to return ot the tank and then check it hot on the jiffy stand and top off if necessary. You manual should outline the correct procedure as well. If you overfill the oil tank, your engine will give it back to you while riding....
