Well I guess the San Diego riders have not seen this. I live north of San Diego and ride down there a quite often. My favorite rides are north of San Diego. You could take coast highway north to Malibu. You could also take the 5 north to Ortega highway and head over to Temecula. If you do stop at Hell's Kitchen for lunch.

Ortega Etc.
Ortega HWY is awesome. So is the trip from San Diego to Palm Desert. There really isn't any bad riding up there, North County has the best (IMO) to offer. Temecula, Ramona, Palomar Mountain, Etc. is worth the ride. We lived in Escondido for almost 7 years and the wife and I rode nearly every day. Have fun and keep the rubber side down.

You'll have a lot of options but some involve insane levels of traffic in between. You can focus entirely on San Diego and Inland Empire and face less traffic.
Hotels - Groupon often has good deals on hotels for San Diego - sometimes very close to beach. Palm Springs would be fun this time of year as well (Feb).
Must do rides:
- Mount Laguna
- Areas around Palomar/Julian (Palomar will be cold/possible snow but if dry - ride it - back and front way)
- Idyllwild via 243/74
- 74 to Palm Springs
Secondary:
- Ortega Highway / De Luz heights (these are great roads for locals but for travel from East Coast - the previously mentioned roads are more special IMHO)
If you can handle the traffic - level - epic:
- Malibu area - especially Latigo to Rock Store (and "The Snake") then back to Decker to beach. Tight turns/cruising conditions but great scenery and lots of little places to discover and cruise along the legendary Malibu coastline. What's not to like.

We've had some rain/flooding damage to Ortega Hwy last week. Washed some of the roadway out, they say. Might want to keep up with conditions as they're probably trying to get it open ASAP. Caltrans would be the site to google.
You can also rent Harley's at Bigg's HD in San Marcos. That's about 25-30 miles North of San Diego. (It's where the "better riding" is anyway.)
I'd stay away from the beach if you're here during a weekend. It's a cluster.
San Diego to Malibu would take several hours of stop-n-stop traffic to do.
Let us know when you get here. Maybe we can show you some roads.
