is it possible to put the 07' up 6 speed trans gear set in the 2000 up 5 speed touring cases....???

 

Unlikely IMHO! Your 2000 bike has the Evo 5-speed, which was succeeded the following year by a later spec TC88 version, then there were a lot of engineering changes between the TC88 and the 6-speed TC96. Harley does make an SE gearset kit that will fit, as do Baker.

 

The 07 and later Harley 6 speeds are a totally different animal they will not work in a 5 speed case
