Rudy's Country Store & B-B-Q
I've dined (a number of times) at Rudy's in 2001 and 2007 in Albuquerque, NM.
They have a store in El Paso.

I wear their t-shirts, loved their tucker and the old logo which used to be worn by the staff, back in 2001.
" I didn't crawl my way to the top of the food chain to eat vegetables"
Their meats are the best I've eaten. Happy eating wherever (everywhere!) you choose.

You've had a suggestion for Black's in Lockhart, which is great, but I prefer Kreuz's, also in Lockhart. Get the pork chop. Try some brisket too of course, but the pork chops are to die for.
I'd avoid Rudy's unless you just have to. It's OK, but it's a soul-less chain.

Many places mentioned but this one is right off the interstate in Luling between San Antonio and Houston.
The City Market in downtown Luling by the rr tracks. Its pretty good and fairly easy off/on the interstate. Luling is pretty small town w/ large gas station on the freeway exit. Good place to get both types of gas!
SE Texas in June is going to be one hot/traffic filled experience. Traffic! Its not just Houston anymore...its just about all of 1-10 from just west of San Antonio to the Texas/LA border. Just my 2cents from living in the area for the past 40 years.
So take your time and do like your doing...enjoy the BBQ.

Take a look at this link and match the locations up with your route. Texas Monthly has been doing these Top 50 Texas BBQ joints pieces annually for years and is a great source. IMO you want sliced brisket, not chopped, for the real deal. Of course not on this list are some great places, too. If you decide on Franklin's in Austin, get there early.
