When in the UP in Michigan, I would suggest joining to Sault St. Marie and Whitefish Point. They have a cool museum up there and a dedication to the Edmund Fitzgerald. There are a lot of beautiful rides in the UP and northern Wisconsin.
As for states to "avoid", really anything between about central Minnesota until you get to the black hills. There is literally nothing there, including trees. Badlands in central South Dakota are also worth a look when you get there. They are a ways east of Rapid City and Mt. Rushmore, but very much on the way. By the time you get there, you will probably be looking for a change in scenery anyway!
You definitely want to swing down and see the Grand Tetons once you get through Yellowstone. They are just south of there, and even though it might be out of the way, it's not that far out of the way. The roads down there are excellent and the scenery is spectacular. When in Yellowstone, be prepared for slow going. If there is a pigeon in a tree on the side of the road, EVERYBODY will stop and take a picture of it... A lot of times, there are entire herds of bison walking down the road holding up traffic.
It's out of the way for your planned route, but I would also suggest riding the Going to the Sun highway in Glacier NP. It's a nice ride with lots of scenery.

You could consider US Route 6, Grand Army of the Republic Highway, through PA if you want to dip a bit further south, that is a sweet ride.
If you are not on a diet hit Tom Wahl's (https://www.tomwahls.com/index.cfm?Page=Avon) on Route 20 in Avon for a burger and chocolate malt.
