Day one ride up Tail of Dragon and go around and back on Cherohola Around 125 mile loop.

Day Two go up by Cherokee and up and over the Smokey Mountain Park, down thru Gatlinburg, up to Pigeon Forge, then over to Townsend and take the Foothills Pkwy which will lead you to the north side of Tail of Dragon and ride it backwards.
Day Three Ride over to Asheville and spend the day at Biltmore Estate on way back take some of the Blue Ridge Parkway to get back to your hotel..

Day 2 go thru Cherokee and up and over the Smokey Mountain National Park into Gatlinburg/Pigeon Forge then over to Townsend on 321 and then the Foothills Parkway will put you at top of the Dragon so you can ride it backwards.

I will be riding though Bean Station in 3 weeks...taking 25e all the way from Del Rio to 75.We are thinking about staying to the back roads over to 65?

is there a good lookout up by Cumberland Gap?

 

I'm not sure if this is what you are looking for, but going thru the tunnel, into Middlesboro,Ky, there is a park, with the pinnacle, (stand in Va. Tenn. Ky. ) with a look out over the gap,
