From Italy to the USA and Canada on a motorcycle, what do I see absolutely ?

I would suggest you try to ship your bike to a city on the east coast of the U.S. This would be the shortest distance for the ship and time for the voyage. Also the shortest, cheapest and possibly the most direct flight for you from Italy.
My choices would be the port of New York/New Jersey; Baltimore, Maryland (you could fly into Washington D.C. also); Miami, Florida or Jacksonville, Florida. Also, Charleston, South Carolina and Savannah, Georgia have very busy ports and are beautiful, old (by our standards) cities. Houston, Texas or New Orleans would be other options with busy ports on the Gulf of Mexico.
With these big cities on the east coast like NY or Washington you could arrive early and see the city. Also, if your bike is delayed you would have something to do while you wait.
If it were me I would plan on either April, May and June or perhaps May, June and July. You could take a few weeks riding down the east coast first taking in the Blue Ridge Parkway, Tail of the Dragon, Charleston, Savannah, and Florida including Key West. Then head west before it gets too hot. Not much to see from Florida west (except if you wanted to stop in New Orleans) until you get to the Texas hill country.
Work your way over to Arizona, California and up the coast to British Columbia and Alberta. From there you can come back down and take in all the great spots previously mentioned in the Rockies and Black Hills while eventually working your way back east to the port.

we are just throwing place names at you You are going to have to do a little work yourself, my friend. You have a big goal: US and Canada. That's a lot of miles. You wouldn't have lots of time to enjoy the places. Also, there is more to your trip than riding, many of the places suggested are great places to ride but not much else.
I suggest you hit the web and find some maps, etc. An easy place to start is www.roadtripusa.com This has 8 cross country routes. Then focus in. Many states have maps. Also, many HD dealers have local books on good motorcycle routes. Just throwing names of places at you won't get you there. Have fun, many times it is fun to plan your routes.

I think shipping into a port less active than a New York port might be easier and cheaper to deal with. That would be my starting point. Then when a location is known you can start mapping a route from there. Using Ride Planner gives you the option of modifying the route, then saving it to work on later.

Get a US map and lay it on a flat surface, make sure the wind is not blowing and take 15 pennies and toss them above the map about 2-3 feet above the map. Then go to ever state that a penny lands on. There are plenty thing to see and enjoy in every state from Florida to Alaska and Maine to California. Canada...Would require another hand full of pennies in itself. And the people that you are going to meet will be the experience of a lifetime. Good luck on your journey, try to document with photos and a log book. Pass them on to the kids back home, not everyone can experience the things that most of us take for granted.

Given that you are going to be using some of your time shipping your bike here then back home, just how much riding time do you plan on having?
