Depends on how far south you mean. 93 from Missoula south to Arco is a nice road. From Highway 20 head north on 75 through Hailey, Ketchum, Sun Valley to Stanley. From there, west on 21 for a fantastic ride along the Payette River. You can continue on to 17 west then 55 to Emmett, or stay on 21 (Ponderosa Pine Scenic Route) going south to Boise. For south of Boise, I'm at a loss.

Go to Craters of the Moon National Park!!! Lava fields in the middle of Idaho, who knew? Take the walk through the lava tubes, really cool stuff, pun intended.
Yes bring water, very hot and dry. Watch for high winds and coyotes.
In Ketchum, you apparently can go to Hemingway's house and other points of interest regarding his time in Idaho. Pioneer Saloon had good ribs and steak.

Yes I plan on staying in the southern Idaho mountains as much as possible. Pinedale Wyoming, Idaho falls, Stanley, Garden valley, McCall, back down to Boise, on up to Stanley again and than south to Ketchum and heading back east by the Craters. Mostly in the mountains so hopefully it isn't to hot. Will be finding motels along the way with 350-450 mile days.
