I did just that 36 years ago and it was the best trip of my life. Three nights camping to a night in a motel. Our only goal was to reach the Pacific. We ran from snow in Colorado, then avoided rain for the next three weeks.
Planned each days ride around the campfire the night before and if we found something interesting on the way, well, we would just stop right there.
The more you plan, the more joy you suck out of a trip. It's called serendipity, let the trip come to you. This is the kind of trip that will bring a smile to you on your death bed.
BTW, the most we paid for gas was in the California oil fields on Rt. 58. 75.9 a gallon and somewhere in the Mojave beer was $1 a can and water was $2. 115 in the shade. Two beers, please.
