Default CV Carb jetting issues

I have a 1979 shovelhead 1200 with a later year CV carb, Cycle Shack mufflers and standard air cleaner. It ran great for years until a mechanic failed to diagnose a hole in the diaphragm and started rejetting. Now the diaphragm is fixed and I can't get the jetting correct. What would be the standard or basic jet size for the main jet and the slow jet? I've gone from a 200 main to a 185 main to a 175 and and it's still rich. I don't know what he did to the slow jet if anything. (He's no longer my mechanic!) Help!
