Carb problem?

Default Carb problem?

So I bought a 75 FLH from my dad's longtime friend. He owned the bike right at 20 years but decided to move on to something newer. Its been sitting for quite a few years. I cleaned it up replaced the starter, voltage regulator, and battery and have been riding. At first it seemed rich, kinda chugging and possibly flooding out at take off. When I was sitting at stop lights I could smell gas from the tail pipes. So I adjusted the carb, but not by much and then it seemed too lean popping out the carb on take off. In both situations, it has died on me taking off, but once I get took off its fine. I also notice it seems to surge a little when I am cruising. Now, with all that said let me give a little info. Its bored .40 over, stroker flywheel, and has an Andrews AB Grind cam. And has a Zenith Bendix carb. Someone suggested the carb may need jetted and someone else said I should buy a Super E. Just looking for a little education and possibly a point in the right direction. Any help will be appreciated.

post the stroker flywheels numbers can be seen in the timing plug window as you turn the motor around

the carb might be rich because it is too small and it needs to be that way because of the motor size
