As long as the oil in the tank stays at or below 250 you should be fine. Change to synthetic and it will drop some just from that and it can handle more heat longer than normal dino oils.
Add a PCIII, SERT, or other fuel management system that will let you richen up the fuel mixture a little and it will go down some more. The 07's are notorious for running hot becasue of the EPA mandates. Get a Stage 1 setup and download and it will run better/cooler.

+1 on synthetic, I love Amsoil, got a ten degree drop with it, and it smoothed my bike out . I ride with two guys that have Road Kings, they are both switching to Amsoil, it is that good. My normal operating temp seems to be 190 to 200. That is with an oil cooler.

My '08 FLSTC Owner's Manual says normal oil temp should be 230 deg F (but now I can't find the page to reference - it is well hidden).

Here is something from the Service manual page 3-13: "oil temerature should be at normal operating temperature 230 deg F for an accurate reading" (of oil pressure).

No reference for ambient temp for the 230 deg value found. Nothing for single or two up found.
