I have a 1999 Fatboy that had solid wheels and now has spokes. The crosswinds thing is a myth. The wind will blow you around just as much with or without the solid wheels. Don't let that myth stop you from doing what you want to do.

The cross wind thing is very real. I moved to SE mn and it is very windy here. I took them off within 2 months of living here. I would ride to work in the morning everything would be fine. Get off work the wind had picked up and I would litterly get blown across my lane. I even had other people ride it just to make sure it wasnt in my head. Solid wheels are fine on a bar hopper.

I cut mine and it made a difference next to semis and and any good windy day. I've only got the back one and I could feel it.
