Default EZ 42mm Mikuni vs Full 42mm Mikuni carb kit?

A few parts to this question!&nbsp\\; I'm looking for bolt on performance boost.

I don't have a lot of extra dough, but I'm thinking of putting a mikuni 42mm carb on my stock 2000 Heritage.
&nbsp\\;
Should I go with EZ mikuni 42mm or Full 42mm kit which looks more complicated?

I am also thinking of doing the www.dohertymachine.com power PACC with power vents due to the great reviews in all the mags for HP and torque increase as I need any additional ***** I can find for this slug!

Maybe I should do cams at same time as carb?&nbsp\\; Or can that wait?
&nbsp\\;
Will this increase or decrease mpg? I currently get 31 to 34mpg which isn't that great.
