Default Intake/Exhaust question

Can I run Vance & Hines Softail Duals with quiet baffles with a stock air cleaner and stock fuel map, or do I HAVE to also stay with a high flow air cleaner like an Arlen Ness Big Sucker and PC III or equivalent? I like the look and sound of the Duals, but I'm having a major heat issue with the high flow AC and the PC III. The bike is a 2006 FLSTI and has been dyno'ed, but it still runs too hot. I saw 265 - 270 degrees on a hot day recently. It runs about 250 - 260 on the highway.

I ran with the V&H Duals with stock breather and map for a while, then installed a SE pro Heavy Breather, PC III, Dyno'd, and heat level is about the same, but runs a lot smoother, with quicker response.
