Converting fuel injection to a carb?

I just picked up my first bike about 6 months ago, never owned a Carb'd bike, so I can't comment on the reliability factor. BUT I do believe in EFI, at this point in time it just seems pointless to fight the technology that is being put into these bikes. Canbus actually makes the wiring pretty simple if you've ever looked a wiring diagram before, and with access to the electrical manuals Harley has out, there is no reason to be scared of it. As far as the tuning it yourself aspect, the Carb wins, BUT EFI can give you a far superior tune, if done on a dyno.
Keep in mind that I'm only 28, so I wasn't around when carbs ruled lol.

In the late 70s we pulled perfectly good electronic ignitions out of new bikes because they "might" leave us stranded, and you could always find Chevy points in WalMart on Sunday afternoon.
This extended the years spent fiddling with points, manually timing ignitions, fooling with centrifugal advance, and generally not getting peak performance out of our bikes.
To each their own. As for me, I love my EFI. No muss, no fuss. Hit the button and go.
