Hi Steve and welcome to HDF. Which Sudbury are you in, there are a few around the World!
To see the instructions for H-D products like their 1200 kit you should be able to find them on their H-D usa website, just go to the Shop tab and enter the details of your bike.
To upgrade your bike there are other brands available, Hammer Performance and their 1250 big-bore kit being very popular in here. To see details look at their website, but also use Search for '1250', when you should find a few threads showing the installation of one.

I did a 1200 conversion about 17 years ago. It's fairly straightforward.

If you bought a new kit it came with instructions, which will include recommending that you also use the factory service manual. You will find that those of us who work on our own bikes heartily endorse that manual! The instructions are also on the H-D website, as I mentioned earlier. Read the words off the pages and ask us specific questions.
