In this area the 1,000 mile service at the dealer is $200. I highly recommend taking the bike to the dealer for this service. Then learn to do the rest of the service work yourself. The 1,000 mile service is kinda a final manufacturing check. Assuming the service department does everything they're suppose to do, it's a fairly extensive check on the bike. And on this one I thing most of the dealers do a good job. They fear lawsuits if they don't.
I don't know what kinda sunshine your salesman was blowing up your a$$. Unless they've changed the maintenance schedule, there isn't a 2,500 mile service.
And No, it will not void your warranty if you don't do this service at the dealer. They will tell you that it does. However, the federal government will tell them differently. I forget the name of the law, but I'm sure someone here will chime in with it, if necessary.

performed on this service. I'd like to do it myself, but if it entails checking stuff I don't have
tools or know-how to check, I'd rather let the pros handle it.
