Gamma, the superlow looks like it fits your wife really well. I really loved my red superlow when I had it. One of the reasons I wouldn't go with the new Superlow 1200T is the weight difference - and there is a difference.
The 1200T is 599 lbs with gas. The Superlow is 562 with gas. That's a big (to me) weight difference.
The Superlow was meant to be a lighter bike and easier to handle. Once you hit the 600 mark of the 1200T you're getting away from what the Superlow was meant to be, in my opinion. Even the sporty customs don't weigh as much (584 gassed up). If she feels she needs more power in the future, I'd do a conversion. You already have the bags and windshield - which is the selling point of the 1200T.
I checked out the 1200T when it first came out - yes, its a touring sporty, but its not a "superlow" anymore and didn't feel like a superlow. It feels like a larger bike now.

I have done the Hammer Performance 1250 kit, I recently ordered a set of Andrews N4 Cams to go in next week. She (wifey) wants the Chrome Dress up kit for the gear cover, primary cover, pulley cover & valve covers. Her last bike was a 1200 Low and all these parts were Chrome. Her biggest complaint now is she scraps on turns, not only the pegs but the kickstand and the exhaust.

PS: She will love the chrome but tell her she washes it.
I cant call mine a superlow, low yes but the 13" shocks push it above 31 inches.

Here's my 2014
Bike fits me great as I'm 5'6" with my shoes on. Plus it was easier to tell the wife I'm gonna spend 10 grand on myself instead of 15
I may move up to to dyna low rider or street bob in a few years. We'll see, I may just mod it some more and go with the 1250 conversion.
I've replaced the stock seat with a Mustang fastback. I plan on adding a burly low sissy bar, detachable windshield for extended highway, possibly new air and slip on mufflers and a swing arm bag.
edit: an possibly some new rear shocks.. these MASS roads can be pretty bad. I've hit a few potholes and it's like getting kicked in the back lol.
