Unless you're seriously tricking it out, don't bother with stroking it. Stick with boring it out. There are 1200cc (lots of options) and 1250(NRHS only that I know of) options out there.
Strokers are more challenge and trouble than they are worth when better alternatives exist.
Do you want a reliable daily driver? Or do you want a high compression beast of a Sportster? Figure out your style and desire of riding, then build the bike that suits you. The 1200 vs 1250 upgrade are two different machines. Despite only 50cc's, there is a lot more than meets the eye.
