How do you guys dry off your bike after washing ? ..

Wipe with micro towel. A quick blow from the compressor to remove water from switches, cables, cracks and crevices. Touch up with the micro towel and hit the road.

Same procedure, or use chamois instead of microfiber...either way.

However, I wash my bike about once per year, max. I have been happier overall with results from constant Lemon Pledge and periodic waxing with a very high quality wax from Chemical Guys.
