Who has replaced their ignition switch with a toggle?

If your concern is corrosion, try a marine supply. JF

I'd like to do this to my 2012. My key almost never fits in the ignition properly, I always have to fiddle with it.

I honestly haven't tried, but I think you should be able to peel it off.

I use liquid electrical tape all the time. Yes it peels off. It does aide in water proofing. I used it to water proof the plugs for my speed sensor and crank position sensor, and well just about any other plug that I found on my bike that could get water caught in it. (where the wires go into the plug itself)

I would almost say you want to hide that switch. You are basically making it so that anyone who finds out the purpose can ride you bike away.
My thought would be like below the tank, or the underside of the backbone. Not really a place that can be seen but both can be easily accessed.

A hidden cut off switch'll do the trick. Rarely used but for those times you park out of your comfort zone.

Yes, under my battery tray. Just a 120v toggle from Home Depot ... don't recall the amp rating but that circuit draws little. No issues with rain.
