Default Sprocket question from the "noob"

ok here we go noob I know but im replacing my sprockets on my 1990 sportster 883 in a long overhaul process and im wondering what the best ratio would be to go with for more of long rides without killing my engine at 70mph, also what the best sprockets are how many tooth etc. bare with me long time rider first bike build ima baby! lol thanks!
