Stage V Tire Shredder - Cam Recommendations

First Impression - Stage V
I just finished getting the Stage V tire shredder installed and took it out for the first real ride yesterday, and it was awesome! I'm still in the break in period so I haven't been able to completely twist the throttle yet, but so far I am really impressed with how hard the bike pulls. My riding buddy decided to rip by in his 103 with Stage 1 and with barely even twisting the throttle to around 4000 rpm, I pulled away from him like nothing. After about 150 miles of riding, I was really happy and feel like the tire shredder with the CR575 cams was money well spent. I'll report back once I get a few more miles and take it in for the dyno tuning.

Whats next??
So I finished my Stage V upgrade with the Cyclerama CR575 Cams and had the bike dyno tuned (sort of) at 106HP & 121TQ. I have decided to ask the forum experts for a couple more opinions...
First of all, the dyno chart is a little disappointing to me. I am happy with the torque numbers, but I just don't feel like much time or effort was put into tuning the bike and that I am probably leaving hp and tq on the table. I say this because they installed a precanned tune for a SE585 cam (not the cyclerama that I have) and ran the first pull. According to the dyno results they adjusted for approximately 17 minutes and then made a final pull with +5hp and +5tq. I just don't feel that anyone can fully dyno tune anything in 17 minutes or with just a couple dyno pulls?
Am I wrong in this thinking, or do I need to take the bike to a different tuner and have them spend considerably more time tuning and making multiple pulls????
My second question is, what components if any, do you think limiting the potential of this build. Here is what I'm using for parts:
Cyclerama CR575 Cam

S&S Headpipe: http://www.dragspecialties.com/products/?productId=316478&partNumber=18020286
Freedom Performance Eagle 4” Exhaust: http://www.directcycleparts.com/exhaust-freedom-performance-touring-eagle-slip-freedom-performance-eagle-slip-chrome-black-touring-p-35640.html
Screaming Eagle Elite Heavy Breather: http://www.harley-davidson.com/store/heavy-breather-elite-performance-air-cleaner-kit
I have considered changing the exhaust to something like a D&D Fatcat and considered having the heads reworked by hillside cycles, but I would like to get peoples opinion on whether either of these changes will benefit the build enough to justify the cost involved??
Thanks,
dakota

Chiming in a little late on this one.
This is actually a pretty nice loking torque curve, but you've got some pretty significant highs and lows (rich and lean) areas in the AFR map - and they handed that to you like that? Did they think you wouldn't notice?
Keeping in mind that a dyno pull is only tracking the cells at 100 map (no closed loop here), you would normally expect to see AFRs contained between 13-13.5. If these cells are that far off, it makes me wonder how bad the rest of the grid looks.
On other business - Ted, I saw the dyno chart from your Hillside 107 (rescued from the SE585 cam) in another thread. Man, that thing is sheer poetry. Scott really knows what he's doing.

yes your curves are fine and you can see adjustment has been made, don't get hung up on numbers as lots of tricks used by dyno operators
take bike in for a couple of power runs at another shop and see where it is at, you can have 10% difference between shops, a lot of high numbers come from x shop

I had the stage v pro kit installed on my 2011 streetglide. Only thing I did extra from the kit was go with adjustable pushrods..
Tuned with the supplied Race tuner and ended up with 123hp and 124 tq. Pretty happy with the results from the kit just the way it comes.

To the op ----- I would look into another tuner and not because of the peak numbers. Its because your AFR looks to be off. One should wonder what the rest of the table looks like. I have seen auto tune feature on my powervision get a more consistent line. At the same time don't get caught up chasing numbers been there and done that. Any tuner can get peak numbers but it's getting a all around great tune that counts. Best advice one can give u is take your time, enjoy what you created, and rack up those miles.
