220 degree engine temp on a 75 degree day?

That temp sounds normal to me under that circumstance - crawling along for half an hour will raise the temp for sure. As the summer progresses and temps climb higher this is where synthetic oil begins to shine as it can withstand the higher extremes far better than dino oil.
An oil cooler can't hurt anything either. I plan on installing one in the next month or so. You increase your oil capacity by almost half a quart I believe and of course the extra radiating capabilities helps you to shed heat even when moving slowly it still helps a little bit.

my bike is running the same way i live in southern new mexico and it got up to 95 degrees out and i was riding around city and my rear cylinder would shut out after 20 mins of riding on the highway it works great but i even had to shut down parade mode and it still was doing it, what could it be??? is it because i have the baffles out?? or could it be a thermostat issue...any advise??

these are air cooled bikes.....
unless you have a thermostatically controlled OIL cooler.
it may be running too lean from de-baffling your pipes.
the head temps are getting really hot and the ecm is trying to cool it off with the "parade" mode, you could fry your motor disabling that function....

i have started tracking my temp for 1000 miles to have a base line on how well an oil cooler drops the temp of the bike.
the bike is a 09 ultra with lowers and a fork baffle. all stock except for V & H basic slipons
morning ride 77 degs it takes 25 min to get to 230 at 70mph then stays there for the rest of my ride
the afternoon ride yesterday 110f on the xepress way took 15 miles to reach 230 and at 35 miles at 70 it rose to 235. it did not go any higher
todays ride will be without the fork baffle. then the next test will be to remove the doors from the lowers, it looks like there will be more air without them.
