I live near Forest Lake and love to ride in the area. We cruise down Manning Trail, over through Square Lake to Marine on the St. Croix. There is a nice "River Road", by Nevers Landing,that is just north of St. Croix Falls in WI that is great.
There are great roads to ride near Balsam Lake WI. We have brunch at "The Paradise".
We sometimes take 61N to 23 through the Namadji State forest, then cross into Superior on the small train bridge.
I even enjoy cruising around Rush Lake a bit further North of the Cities.

On one ride I left NH crossed VT into NY as many country roads as I could. I crossed into Canada at the Cornwall crossing and rode north of the Lakes to Sault Ste. Marie and crossed back to the USA. I then rode along the Big Lake to Duluth and took Rte 2 west to Grand Rapids and got on Rte 38 north to Rte 1 west to Thief River Falls. From there I just took roads random south and west all the way to Sturgis.
Along Lake Superior the wind picked up andwas wild and cold and cut like a knife. That wind didn't let up until I was just about into SD. Really had to lean the bike into it and be ready for the bursts that would sneak up out of no where. Saw lots of wild life in WI and MI.
My advice is to take all the senic roads that time will allow and eat at the Mom an Pop shop eateries. They got the best food and they love to hear and tell road stories.

Hi Chris, I think you nailed the good local riding in the east metro. The river valleys are always good.
I agree with Chappy MN 38 north of Grand Rapids is a great ride. MN 65 from Nashwauk to Littlefork is a nice scenic isolated ride of 80 miles with no gas stations. North shore is always good. Old 61 between Hinkley to Duluth.
I'm looking forward to Wednesday nights but I've got a little work to do before then.

We also live in Forest Lake and take the same rides you speak of. We like to go down through afton then to prescott, stop at the Gem and down to nelson on the WI side, cross into Wabasha, and head back up 61 through Welch. Its a nice ride.
Thats just one of the rides. We also take a mothers day run up to turtle lake via 8, Or we like to do the loop through Osceola to Star Prairie, Follow WI 63 back up to 8, then to Taylors falls.
