I am looking for suggestions on cams.

Here is a break down of what will be run.

74" .020 over KB's
dual plug heads
dual Dyna coils
Dyna digital programmable ignition
S&S Super E carb

4 speed tranny

I am also looking for information on valves. I measured mine pretty closly and the exhaust is about 1.75" and intake is 1.93" are these stock? I am looking for a well rounded cam that will give decent mid and top end performance.

It looks like Andrews are reasonably priced and the A or J grinds seams like the options that would suit my needs.

I would run the Manley street stock stainless steel valve set. There is a package deal that comes with the springs, collars, and keepers. I would also replace the valve guides with Ampco 45's and k line valve seals. I would also run solid lifters and Andrews pushrods to really wake this motor up. With this setup, you will have a solid, long lasting top end.

The Andrews A grind would be a great choice.

The only thing I would do different is run wisco pistons. Only because they offer a higher compression verison, but it will run very well on your choice of piston also.
