 I have a 2007 Road King, I just came from a trip to NC mountains (somewhere I am not used to riding) and while cleaning the bike up I noticed the front and rear brake pads are looking a little thin. What is the min thickness before they require replacement?

I think the replacement spec is 1mm which is kind of scary if you think about it. I think you want to change stock pads sooner than later. The choice seems to be to switch to EBC or LRB brake pads. Stock pads will score the rotors.

2005 service manual specifies .090" which is a little more than 2.2mm.
