What oil and what filter are almost like what religion.
I've done a few oil changes on my bike in the last 22 years and 75K miles. I generally use HD 20W50, but have Mobile 1 VTwin in right now. For filters, I use Genuine Toyota filters bought from the Toyota dealer for a 22R motor, as found in a 1986 Truck, for example. They are black, under five dollars and I trust Toyota a whole lot more than the Fung Ha Wong Filter Company of China or whereever the chrome filters supposedly for HD's come from. Some of the Toyota filters are even made in the US.
I cut a piece of cardboard, fold it some and wedge it under the drain hole and over the exhaust pipe to keep (most of) the oil off the pipe. Doing your own oil change is a good way to get to know your bike.
About the only other advice I can give you is try to keep it all HD when you need something. A lot of aftermarket stuff is good, some is very good, and a lot of it is crap. For most of it, I don't know which is good and which is not. In general, Genuine HD is at least good, like clutches, starters, electrical stuff, etc.
